I wish I could take credit for this easy breakfast frittata recipe, but my brilliant friend Cortney is a frittata genius, so I figured I’d just share her recipe with you guys instead. Why mess with a winner? 😉 All in all, this recipe takes about 20 minutes to throw together AND bake, so you have no excuses! It’s the perfect Sunday morning breakfast to make for the fam, a great option to take to brunch, or perfect for a weekly meal prep breakfast!
Here’s what you’ll need to make your own:- 8 Eggs
- 1/3 Cup Milk
- 1/4 Cup Ricotta Cheese
- 2 Italian Sausage Links (Removed From Casing, Crumbled and Cooked Until Brown)
- 2 Cups Spinach (Lightly Wilted in Olive Oil)
- 1/4 Cup Julienned Sun Dried Tomatoes
- 1/4 Cup Crumbled Goat Cheese
- 1 Tbsp. Olive Oil
- Garlic Powder (To Taste)
- Salt (To Taste)
- Pepper (To Taste)
